A "Nose to Tail" dinner is one that features dishes made from the less common parts of the animal--typically, the leftovers of the butchering process. As such, most people don't really want to know what they're eating (haha). Since this dinner was marketed to an adventurous diner, though, we thought we'd give them the option of knowing the whole truth... To accomplish this without slapping diners in the face with words like "entrails", we produced a menu with flip-up tabs; the top menu language (the default position of the menu) featured easy-to-swallow language, and guests could flip the tab up to reveal the same item description with more... anatomical detail.
